Mango and Avacado Salad

I am sure I am not original in combining avocados and mangoes but I just love this easy refreshing salad.  The summer is perfect time to grow your own fresh herbs.  My little garden is full of basil, dill, cilantro, oregano, thyme and the ever present mint.  You will find your recipes will taste so much better when they are made with fresh herbs.  The following is a perfect example.

Mango and Avocado Salad

 

1-large ripe avocado cut in 1/2-inch pieces

1-large ripe mango cut in 1/2-inch pieces

1-small red onion, thinly sliced

1-Tablespoon chopped fresh cilantro

1-Tablespoon chopped fresh mint

2-Tablespoons fresh lemon or lime juice

3-Tablespoon extra virgin olive oil

Salt and Pepper to taste

 

Place the cut avocado and the cut mango in a medium bowl.  Add the lemon or lime juice coating pieces gently to prevent the avocado from turning brown.  Add all the rest of the ingredients and stir to combine.  Refrigerate until ready to serve. This amount serves 4 but can easily be doubled or tripled.
