“A Piece of Cake”

Peanut butter cookies! Need I say more? I have been making this easy recipe for years; it came from an old Mennonite community cookbook. Shorting is used instead of butter making the results more shortbread like. This recipe makes between 6 and 7 dozen cookies that will freeze beautifully. The dough can also be made and frozen to be baked off at a later date.
Peanut Butter Cookies
1-cup peanut butter, smooth or chunky
1-cup brown sugar, packed
1-cup granulated sugar
2-teaspoons baking soda
1-teaspoon baking powder
1-teaspoon real vanilla
Cream shortening and peanut butter until combined, add both sugars continuing beating. Add eggs along with baking sods, baking powder, salt and vanilla. Beat until everything is combined. Slowly add the flour. IF the mixture is too soft refrigerate until firm enough to handle. Shape dough into 1-inch balls and place an inch or two apart on a parchment lined (or lightly greased) baking sheet. With a fork dipped in sugar make crisscross marks on top of cookies flattening them slightly.
Bake the cookies at 375º for 10-12 minutes or until edges are slightly browned.
